Bacon Wrapped Pork Fillet

This is a very easy recipe, and not too expensive either. It is fast to make – perfect for a weeknight. The bacon ensures that the fillet stays juicy, so you don’t have to worry about the meat drying out.
Serves 4 people
Ingredients
± 450 g pork fillet
250 g streaky bacon
Salt and pepper (or meat seasoning)
Olive oil
Sweet and Sour Sauce
Method
Preheat oven to 180 ˚C. Prepare the Sweet and Sour Sauce, and set aside.
Season the pork fillet with salt and pepper, or other preferred seasoning. Heat the olive oil in a pan and sear the pork on all sides till brown.
Remove from pan and wrap the bacon around the pork fillet. Place the bacon wrapped fillet in an ovenproof dish, and cover with the Sweet and Sour Sauce. Bake for 25-30 min, basting the fillet a few times with the sauce. Let the fillet rest for 5 min, and serve with sweet potatoes.
