Butter chicken (cheat)

This is my quick butter chicken version.  Most cook-in-sauces can be adapted to the recipe, but the one from Woolworths remains the tastiest.

Ingredients
Oil, for frying
1 medium onion, chopped
5 ml (1 t) sugar
4 chicken breasts, cut into strips
15 ml (1 T) Maizena
15 ml (1 T) chicken masala spice (Note 1)

For the sauce, choose one of the following options:

Option 1:
1 packet (400 g) butter chicken cook-in-sauce
1 small can (165 ml) coconut milk
chicken masala spice, to taste
salt and pepper, to taste

OR

Option 2:
50 g butter chicken paste
1 can tomatoes, chopped
1 small can (165 ml) coconut milk
55 g (4 T) butter
chicken masala spice, to taste
salt and pepper, to taste

Method

Fry the chopped onion in a small amount of oil with the sugar, until soft and translucent.  While the onion is frying, add the Maizena and chicken masala spice to the chicken and mix well.  Fry the chicken with the onion until golden on the outside.

Option 1:

Add the butter chicken cook-in-sauce and coconut milk to the chicken.  Simmer for 30 minutes.  Add chicken masala spice, salt and pepper to taste.

Option 2:

Fry the butter chicken paste together with the onions for a minute.  Then add the can of tomatoes and simmer for 5 minutes.  Add the coconut milk, butter and chicken to the tomato mix and simmer for 30 minutes.  Add chicken masala spice, salt and pepper to taste.

Serve with rice, naan or poppadoms. Serves 4.

Recipe notes
Note 1: SpiceMecca chicken masala spice is very tasty, and works well.  A butter chicken spice mix can also be used.
