Brownies

The brownies are a combination between fudgy, cakey and chewy.
Ingredients
¾ c (175 g) butter
80 g dark chocolate
3 eggs
1 c (200 g) brown sugar
½ c (80 g) muscovado sugar
¼ c (62.5 ml) oil
2 T (30 ml) plain yogurt
2 t (10 ml) vanilla essence
1 t (5 ml) baking powder
½ c (50 g) cocoa powder
100 g flour (Note 1)
pinch of salt
optional: 80 g white chocolate (broken into small pieces)
Method
Melt the butter and dark chocolate together in the microwave.
Beat the eggs and sugar together until light and fluffy. Stir in oil, yogurt, vanilla and melted chocolate. Then add the baking powder, cocoa powder, flour and salt to the mixture. Fold in the white chocolate, if using.
Pour the batter into a large ovenproof dish lined with baking paper, and bake for 25-30 minutes at 160-170°C. A cake tester should just come out clean.
Makes ± 24 brownies.
